Steak with Anchovy Butter
Because of my increasingly busy schedule and the limitations of my small kitchen, I’ve been trying to cook easier recipes lately without sacrificing flavor. I couldn’t go wrong with a nicely-browned steak and salty, garlicy butter to top with, just perfect with a side of fries. I’m not much of a steak person, but every once in a while I can’t help but crave a hunk of meat. (Sorry, PETA.)
Ingredients:
2 garlic cloves, minced
1/4 stick butter, softened
3 anchovy fillets in oil, drained and minced
1 teaspoon fresh lemon juice
3/4 teaspoon black pepper
1 tablespoon chopped parsley
2 steaks, each about 3/4 lb
1/2 teaspoon salt
2 tablespoons olive oil
1. Mix garlic with a pinch of salt in a small bowl. Add butter, anchovies, lemon juice, and 1/4 teaspoon pepper until combined well. Stir in parsley.
2. Pat steaks dry and sprinkle with salt and remaining 1/2 teaspoon pepper. Heat oil in a heavy skillet over moderately high heat until hot. Saute steaks, turning once, about 8 minutes total. Transfer steaks to a cutting board and let stand 5 minutes before serving.
3. Top steaks with a dollop of anchovy butter and serve.
