Soba Noodle Salad with Steak and Mint
It’s almost November, but I’m still posting about summer food! I made this soba noodle salad with steak and mint back in August.
Ingredients:
1 package buckwheat soba noodles
1 pound thinly sliced steak (I buy the kind reserved for shabu shabu or bulgogi at the Asian grocers)
1/2 cup daikon radish, thinly sliced
1 carrot, thinly sliced
1/2 cup mint leaves, torn
For marinade:
2 tablespoons soy sauce
2 tablespoons sake
1 tablespoon sugar
1 teaspoon chili garlic sauce
1 teaspoon sesame oil
For dressing:
2 tablespoons soy sauce
1 tablespoon honey
1/2 teaspoon chili garlic sauce
2 teaspoons sesame oil
1 garlic clove, minced
1 teaspoon ginger, minced
1. Combine marinade ingredients, add beef and toss to coat. Cover and refrigerate overnight.
2. Combine dressing ingredients and set aside.
3. In a large pot, boil the soba noodles until cooked, about 8 minutes. Drain and let cool for a few minutes, then place in a large serving bowl.
4. Meanwhile, remove beef from marinade and preheat broiler. Place beef on an oven rack and broil in oven for 3-5 minutes, watching carefully to prevent scorching. Set beef aside.
5. Add noodles to a large serving bowl and add dressing, vegetables, and beef and combine well. Garnish with mint and serve.
