Coconut-Pineapple Batidas
Nothing says summer more than fresh fruit, preferably in icy, liquid form. Pineapples are in season, and paired with the rich flavor of coconuts, these batidas were wonderfully refreshing.
Ingredients:
1/2 fresh pineapple, peeled, cored and cut into chunks
1/2 cup unsweetened coconut milk, stirred
3 T fresh lime juice
1 T sugar
1 1/2 cups crushed ice
1. In a blender, combine the pineapple chunks with the coconut milk, lime juice and sugar and puree until smooth. Add the crushed ice and blend until frosty. Serve at once.

it kind of looks like the open face crab sandwich! kind of!
