Spicy Chicken with Potato Chip Crust
it’s kind of a joke among friends and family that the odder the dish is, the more apt i am to want to try it. when i eat out, i usually choose the most intriguing item i can find. (i’m often dissapointed, but that’s another story.) recently i’ve been trying to cook more mainstream, classic meals. and what’s more mainstream than good old fashioned american style chicken? or pasta? i took a stab and here’s what i came up with:

Spicy chicken with potato chip crust. i had my reservations about making this dish, but with some modifications, it came out surprisingly delicious.

shrimp scampi with capellini. also yummy, and so easy to make.
here’s the recipe for the chicken:
1/4 cup mayonnaise
2 tsps chile powder
1 t five-spice powder
1 t grated lemon zest
1 t pepper
salt
1 1/2 lbs chicken cutlets
1 7-oz bag hawaiian-style potato chips, crushed
3 T butter
1. in a bowl, mix the mayonnaise with the chile powder, five-spice powder, lemon zest, pepper and a pinch of salt. add the chicken and turn to coat.
2. spread the potato chips on a sheet of wax paper. coat the chicken with the crumbs, pressing to help them adhere.
3. melt 1 tablespoon of the butter in a large skillet. when the foam subsides, add half of of the chicken cutlets and cook over moderately high heat, turning once, until browned and cooked through, about 5 minutes. repeat with the remaining batch of chicken.
