Salmon and Salmon-Skin Maki
have i ever mentioned how much i love nori? i love it on crackers, i love on soups, i love it plain as a snack, and best of all, i love it on sushi:

indonesian-style yellow chicken curry. it didn’t turn out as flavorful as i had hoped for.
here’s the recipe for the maki:
1 1/4 cups sushi rice
2 T rice vinegar
1 1/2 T sugar
salt
2 t toasted sesame seeds
vegetable oil, for frying
4 salmon fillets, with skin
ground pepper
6 nori sheets
1 cucumber, halved crosswise and cut lengthwise into thin strips
soy sauce, for serving
1. rinse the rice and put it in a medium saucepan. cover with enough water for the rice to be submerged about 1 inch below the surface. cover and cook over high heat until at a rolling boil, about 5 minutes. reduce heat to low and cook for about 10 minutes. remove from heat and let sit covered for 5 minutes.
2. in a bowl, stir the vinegar with the surgar and 3/4 teaspoon of the salt until dissolved. spread the hot rice on a baking sheet and sprinkle with viegar mixture, lightly stirring and tossing the rice to cool.
3. in a saucepan, heat 1/2 inch of the oil over medium-high heat. with a knife, cut the skin from the salmon fillets, leaving 1/4 inch flesh on the skin. season the salmon skin with salt and pepper and dust with flour; season the fillets with salt and pepper as well. fry salmon skins two at a time, turning once until browned and crisp, about 3 minutes. repeat with fillets.
4. put a nori sheet on a sushi mat. pat 3/4 cup of the rice on the nori in an even layer, leaving a 1-inch border all around. sprinkle 1/2 teaspoon of the sesame seeds over the rice, then lay some salmon skin and fillet on the rice nearest to you and top with cucumber strips. lift the end of the mat nearest you up and over, pressing to tuck the skin and cucumber into a cylinder. tightly roll up the fillings in the rice and nori. repeat to form the remaining rolls. cut each roll into 6 pieces and transfer to a platter. serve with a small bowl of soy sauce.
Hey there is a Japanese festival (something sakura) in japan town this weekend, are you going ? I think I will be there on Sunday for the parade, they also have a lot of food stalls.
