Cassoulet d’Amore

i feel like i haven’t been cooking enough asian food lately. not that i don’t enjoy non-asian cuisines, but i’m a bit partial to the freshness of east/southeast asia.

nevertheless, there’s no shortage with european and american cuisine either:

cassoulet d’amore

here’s the recipe for the cassoulet:

1 lbs sweet italian sausages, casings removed
6 green onions, chopped
6 garlic cloves, chopped
2 T olive oil
2 cups canned crushed tomatoes with added puree
2 15-oz cans cannellini beans, drained
1/3 cup chopped parsley
1 T dried oregano
1/2 cup breadcrumbs
1/2 grated parmesan cheese

1. preheat oven to 400 degrees. combine sausages, onions, garlic, and olive oil in heavy saucepan over medium-high heat. saute until sausages begin to brown, breaking up sausages with back of spoon, about 12 minutes. remove from heat.

2. mix in crushed tomatoes, beans, parsley, and oregano. season to taste with salt and pepper. spoon mixture into large glass baking dish.

3. combine breadcrumbs and cheese in small bowl. sprinkle crumb mixture evenly over cassoulet. bake until cassoulet is heated through, bubbling around edges and light brown on top, about 35 minutes.
