Tropical Fruit Salad

i’m over a week late, but better late than never (that’s seemingly become the mantra of this blog).

mother’s day brunch was a success. i was happy with how it all turned out, and judging by the seconds (and thirds) taken, so was my family:

center
individual oven-coddled eggs with mashed potatoes and herbs

spiced pumpkin pancakes

tropical fruit salad

mango-mint sparklers

here’s the recipe for the fruit salad:

1 banana, sliced
1 kiwi, sliced
1 mango, diced
8 kumquats, sliced
15 red grapes
10 strawberries, halved
1 can jackfruit and palm seed in syrup, drained
1/3 cup dried shredded coconut

mix ingredients in a large serving bowl. refrigerate until chilled, about one hour. enjoy!
